- 400 grams of pasta noodles
- 1 lemon
- 1 knob of butter
- ½ cup white wine
- ½ pint of cream
- 2 tablespoons grated Parmesan cheese
- salt
- black pepper
Preparazione:
Peel a lemon, reduce the peel into a thin julienne strips and leave for 10 minutes in cold water to remove the bitterness, drain and place in saucepan with a knob of butter, stirring with a wooden spoon, let it brown and add ½ cup white wine and let reduce by 2 / 3. At this point add the cream and ½, over low heat, stirring occasionally, reduce to 1 / 3, when it is dense enough turn off the heat and season with salt and freshly ground pepper. Cook the fettuccine in boiling salted water, drain and let it blow into the saucepan with the sauce that you prepared.
