Ingredients for 4 people:
- 200 grams of shelled beans
- 30 g butter
- 3 eggs
- 4 egg whites
- 6 stalks of chives
- 1 onion
- black pepper
- salt
- lettuce salad to decorate
Preparazione:
Peel and cook the beans in a pot filled with boiling salted water for 20 minutes, drain and mash in the ‘running water to cool and to keep the color bright green, then privatele the outer skin. Whisk in a bowl with fork na 3 eggs, add a pinch of salt, freshly ground black pepper and fresh chives, washed and chopped with a pair of kitchen scissors. Line a mold with a capacity of half a liter box with a sheet of baking paper wet and wrung out. Melt 10 g butter in a pan, pour the beaten eggs and cook over medium heat, scrambled with a wooden spoon to not scratch the pan .. Pour one third of the omelet on the bottom of the mold, distributing over half of the beans, keep it up to use up all the ingredients.
Bake at 170 degrees for 20 minutes, let it cool off the dish in the oven and serve it on a serving plate lying on a bed of lettuce (washed and dried with absorbent paper towels), onion rings and fresh beans.
